r COOKING INSTRUCTIONS

- r In a fine mesh sieve (strainer), thoroughly rinse and drain 1 cup of quinoa under cold water until the water runs clear.
- r Place quinoa in a medium saucepan with 1⅓ cups water or broth and bring to a fast simmer.
- r Cover with a tight-fitting lid. Reduce heat to maintain a low simmer and cook for 17 minutes.
- r Remove from heat (keep covered) and steam for 5 minutes. Fluff with a fork and serve.

r *If the quinoa is too firm at the end of cooking, it may be necessary to add 1-2 Tbsp. liquid and cook longer.

r **Quinoa can be prepared in a rice cooker following the same quinoa to rice ratios as above.
